Smelling faintly of peaches and nectarine, this unique wine has a round body that is complemented by the sweetness left over when we stopped fermentation. Layers of peach, honeysuckle and honeydew shape this lovely sweet wine.

The Process of
Wine Making

Winemaking involves harvesting grapes, crushing and destemming them, fermentation to convert sugars into alcohol, pressing, aging, and finally, clarification and bottling.

Wine grape harvesting, or "the crush" as it's sometimes called, is a crucial step in winemaking, involving the picking of grapes at their optimal ripeness, which can be done either by hand or mechanically.

Wine fermentation is a metabolic process where yeast, primarily Saccharomyces cerevisiae, consumes the natural sugars in grape juice (also known as "must") and produces ethanol (alcohol) and carbon dioxide as byproducts.

Fermentation

To age wine in a barrel, ensure the wine is fermented and cleared before racking into a clean, preferably oak, barrel, and store it in a cool, dark place. Monitor the wine periodically, taste it, and consider topping up as needed to prevent evaporation.
